In 1996 she teamed up with pastry chef, Nadine Mc Cristal, to open TWOCAN in Belgrave St, Manly-for five years a very popular Manly eatery which received many rave reviews and excellent ratings in the "Sydney Good Food Guide".
The arrival of the first of two children forced Vicky to give up the demanding duel role of proprietor and head chef. Since she has focussed on less demanding part-time positions at several Northside restaurants, whilst developing her catering business. She has catered for every type of occasion-from large corporate functions, shipboard buffets and weddings, to intimate home dinner parties.
